It sits closer to an off-note than a desirable tasting characteristic, often appearing as a thin, slightly chemical finish that lingers after swallowing. It is most commonly associated with certain robusta varieties, over-roasted beans, or contamination introduced during processing, storage, or brewing equipment that has absorbed previous flavours.

How plastic notes develop

Coffees processed using certain wet or semi-washed methods in humid environments can sometimes exhibit plastic-adjacent notes, particularly when fermentation is poorly controlled or drying conditions are inconsistent. Origins where robusta is blended into commercial-grade lots, or where green coffee is stored in synthetic sacking for extended periods, typically show a higher incidence of this quality. Arabica lots from regions with less rigorous post-harvest infrastructure occasionally present this note as well, though it is far less common in carefully sourced speciality-grade material.

What to look for

A plastic note is unlikely to be flagged as a positive descriptor on a speciality coffee bag, so its presence is generally discovered through cupping rather than label guidance. If tasting notes on a menu lean heavily towards clean, high-acid fruit or floral characteristics, the coffee is less likely to carry this quality. Brew methods that use high water temperature or involve prolonged contact with lower-grade plastic components, such as certain pod machines or older French presses with synthetic seals, can sometimes amplify or introduce a plastic character independently of the bean itself.
