Thailand occupies an interesting position in speciality coffee, producing arabica at elevations of around 1,000 to 1,600 metres across the mountainous north of the country, principally in Chiang Mai, Chiang Rai, and Doi Inthanon. The cup character tends toward mild acidity with a medium body, often showing notes of chocolate, nuts, and gentle fruit, though quality and consistency can vary considerably across producers. Catuai, Catimor, and a handful of local hybrids are the varietals most commonly encountered, with Catimor's disease-resistant profile making it particularly widespread among smallholder farmers in the region.

Processing methods are diverse, reflecting both Thai agricultural traditions and growing speciality interest. Washed coffees remain common and typically produce the cleaner, more straightforward cup profiles the origin is associated with, while honey and natural processing have gained ground as producers respond to demand for more characterful results. Thailand is not a dominant presence in espresso blending, but it does appear as a single origin in speciality contexts, particularly where roasters seek milder, accessible Asian-grown arabica.
