The principal growing regions include Cajamarca, Amazonas, San Martín and Junín, with most quality-focused farms sitting at altitudes between roughly 1,500 and 2,000 metres above sea level. Typica, Caturra and Bourbon are the most commonly encountered varietals, though Catimor remains widespread across the country. Washed processing dominates and accounts for the clean cup character the origin is generally associated with, though a modest number of producers have begun experimenting with natural and honey methods in recent years.
