Coco Jambo

Coco Jambo is a washed-process coffee from Catalyst Roasters, a method that strips away the fruit layer before drying to produce a clean, well-defined cup. In the glass it delivers coconut and tropical sweetness alongside chocolate ganache and caramel, with a finishing note of sweet butter that gives the body a smooth, rounded quality. Its omni roast profile means it performs reliably across brewing methods, though a filter approach — V60 or Chemex — tends to highlight the lighter coconut and tropical tones most clearly. Served black and at a slightly lower temperature, around 90–92°C, it rewards patience.
