China produces speciality coffee primarily in Yunnan province, in the mountainous southwest of the country, where farms sit at altitudes of roughly 1,000 to 2,000 metres. The cup character tends toward mild acidity, a medium body, and flavour notes that often include milk chocolate, brown sugar, gentle stone fruit, and occasional earthy or woody undertones. Typica and Catimor are the most widely planted varietals, with Catimor dominating due to its resistance to leaf rust, though its presence can sometimes pull the profile toward a slightly rougher finish. Washed processing is common and generally produces cleaner, more delicate results, while natural and honey processing are gaining ground and tend to bring out more pronounced sweetness and body.
As an origin, Chinese speciality coffee remains relatively modest in global profile but is gradually attracting attention from roasters interested in its consistency and approachable character. It occasionally appears as a single origin filter offering and is sometimes used in blends where a softer, low-acid component is useful.
