Kilimbi

Kilimbi comes from Rwanda and is processed using the honey method, where some of the fruit pulp is left on the bean during drying, encouraging a natural sweetness and body. In the cup, expect stone fruit and a gentle caramel quality, with a smooth, rounded finish. The honey process lends enough structure to hold up well as a pour-over, where the clarity of the fruity notes comes through cleanly. It also works without milk, allowing the natural sweetness to speak for itself.
