These beans come from Colombia and are processed using anaerobic fermentation, a method that develops complexity and brightness in the cup. You'll find strawberry and caramel on the palate, with subtle rooibos undertones that add an herbal dimension. The aroma carries those same fruity characteristics. We'd suggest brewing this at a slightly lower temperature than usual to preserve the delicate fruit flavours—around 90–93°C works well.
