These Ethiopian beans from Kiss the Hippo are processed using the honey method, which contributes to their naturally sweet character. The cup offers a lovely balance of stone fruit flavours—peach and apricot—alongside delicate floral notes and a creamy body. Brew them at a slightly lower temperature (around 90–92°C) to let these subtle flavours come through without harshness. They work particularly well as a filter coffee, where you can appreciate the full range of their aromatic profile.
