Sudan Rume

Sudan Rume is a rare heirloom variety grown in Colombia and processed using the washed method, which strips away the fruit before drying to produce a clean, clearly defined cup. Expect delicate notes of apricot and white grape alongside a softer tropical quality from the papaya, with a light, almost tea-like body. This roast rewards a gentle brewing approach — a V60 or Chemex works well, keeping water temperature around 90–92°C to preserve the fruit brightness without drawing out any bitterness. It drinks well black, where the subtle complexity has room to come through.
